Pistachio Millet Tea Cake
Pistachio. Saffron. A Soft, Delicate Crumb.
A delicate tea cake built around the quiet richness of pistachio and the warm aroma of saffron.
Made with foxtail millet, finely ground pistachios, oat flour, coconut sugar, and thick homemade-style peanut milk, this cake has a soft, tender crumb with a gentle nuttiness throughout.
A small infusion of saffron adds a subtle floral warmth, while cardamom brings an elegant aromatic finish without overpowering the pistachio.
Chopped pistachios are folded through the batter for little pockets of nutty texture, creating a gentle contrast against the soft cake.
Lightly sweetened and intentionally delicate, this is a cake made for slow tea-time moments rather than heavy dessert occasions.
Soft, aromatic, nutty—and quietly indulgent.
Allow the cake to cool completely before packing to prevent condensation and protect its texture.
At room temperature, store in an airtight container and consume within 3–4 days.
For retail storage, refrigeration is recommended. Keep tightly sealed and consume within 7–8 days.
Bring to room temperature before serving for the best texture and flavour.
For longer-term production storage, the cake may be frozen for up to 30 days when properly wrapped and sealed.
Thaw overnight under refrigeration and allow to come toward room temperature before serving.
Foxtail Millet
A naturally occurring source of complex carbohydrates, dietary fibre and minerals. Foxtail millet gives our crisps a distinctive grain-based foundation, offering an alternative to conventional refined-flour recipes.
Pistachio
Pistachios provide plant-based protein, dietary fibre, unsaturated fats and essential nutrients such as vitamin B6. Their naturally rich, nutty flavour adds depth and a delightful crunch to our tea cake.
Saffron
Infused into warm plant milk before being added to the batter. This allows the delicate saffron aroma to disperse throughout the cake rather than remaining concentrated in one place.
Cardamom
Used sparingly to complement the pistachio and saffron without overpowering their delicate character.
Coconut Sugar & Palm Jaggery
Used instead of refined sugar for a more gradual energy release and a deeper, less aggressive sweetness.
Thick Peanut Milk
A plant-based alternative to dairy milk, thick peanut milk adds natural creaminess and richness to our tea cake. It helps create a soft, moist crumb while complementing the nutty flavour of pistachio.
Rice Bran Oil
Provides unsaturated fats, including monounsaturated and polyunsaturated fatty acids. We use it for its neutral flavour and to achieve the delicate texture our crisps are designed for.
